Abstract
In the article the phenomenon of food (FBD), a health problem that inherits and enhances the new millennium transmitted diseases was reviewed. From international, Cuban sources and the particular experience of the authors, subject matter and its causes it is: the pollutants are exposed human foods, with emphasis on bacterial, most zoonotic dissimilar enriched data I investigated in the province of Camagüey - Cuba. Some considerations about invariants that make certain foods in target bacteria, the moments of greatest risk and the need to promote an educational policy to alert producers and consumers are exposed.
