Is the Behavior of Gastronomic Tourists Influenced by the Generational Component?

Abstract

This chapter aims to analyze whether and how the generational component influences the behavior of gastronomic tourists. Based on the results of a questionnaire carried out on 421 gastronomic tourists at an international level (with a representative sample of all regions of the world, according to the classification of UN Tourism), it will be demonstrated, using an econometric model, that tourists belonging to different generations (Baby Boomers, Generation X, Millennials or Generation Y, Centenials or Generation Z) show very different expectations, preferences, and behaviors when it comes to gastronomic tourism. The results obtained will allow for improved decision-making processes of stakeholders involved in tourist destinations that opt for gastronomic tourism, which will be able to direct their offer to one generation or another in a more efficient way.
