INTRODUCTION: It is urgent to protect the food environment to prevent malnutrition that affects the childhood of the Andean region. Little of barriers and facilitators are known to promote healthy food systems. Objective: Evaluate barriers and facilitators to promote a healthy school food system in Ecuador and Peru, through innovative and participatory mixed methods. Methods: Mixed observational study with schoolchildren from the public education system and key actors, distributed according to gender, urban/rural area. Quantitative methods will be applied with 400 6-12-year schoolchildren to estimate the consumption of ultraprocess, and qualitative (arts-based methods and Group Model Building) to determine barriers and facilitators to promote healthy food school environments. Expected result: intersectional models, on ultraprocessed and barriers and facilitators for healthy school food systems to inform relevant public policies.
