Determination of the mycological flora and its toxigenic power in industrialized-piled rice consumed by the population of Azuay

Description

The purpose of the present study is to determine the potentially toxigenic mycological flora in the rice consumed in the Azuay, specifically in the Cuenca canton and in the Nabon canton, identify the species of molds existing in the same and its toxigenic power. The analyzes will be carried out in the laboratories of the Faculty of Chemical Sciences, where it currently operates in the VLIR Nutrition Project, they will be carried out with standardized Methods of the AOAC, with the advice of the researchers of the Nutrition Vlir project. To analyze toxigenic power, the HPLC equipment provided by the aforementioned project will be used. The expected results will be: the description of the mycological flora of the rice consumed in the province of Azuay as well as its power generation power in the specific conditions, the standardized methods and techniques, both for the identification of the molds and for the determination of the toxigenic power thereof and the recommendations for storage of this food based on the studies carried out.
