Description

The mineral content in a food, like other nutrients, can vary due to multiple factors such as climatic, geographical, processing, among others. The objective of the project is to determine the mineral content of Na, K, CA, MG, FE, P, SE, CU and ZN in local foods in the city of Cuenca and to evaluate its seasonal and geographical variability. The mineral content will be determined by atomic absorption spectroscopy, with the exception of phosphorus that will be determined by spectrophotometry. The impacts of this project will have a scientific scope because it refers to the generation of knowledge in the food field at the local level; And a social scope because the results generated can be used by health professionals, teachers, students and the community in general. This project will have the duration of 2 years and its total budget is $ 59996.66 (applied to DIUC).
