Food security, public health are relevant issues. In the dairy industry, it involves having harmless dairy products: that is, milk throughout its production chain, must meet certain quality requirements in its physical-chemical, myorbiological composition, do not contain adulterating substances, comply with regulations, adequate storage and transport conditions, etc. in Ecuador, according Cañar, 156000 coasts were seized to dairy means of transporting for not complying with quality parameters, causing losses to producers and carriers. The objective of this research is to characterize and analyze the quality of raw cow's milk that enters the collection and correlation centers geoSpacially the possible factors that affect their quality through physical-chemical, microbiological analysis, ambient temperature, georeferencing of milk trnasport routes, which facilitates decision making for improvement of milk quality destined for the industry Of life of producers and consumers. The province of Cañar that has the largest milk production in relation to the number of inhabitants and territorial extension will be taken as a case study. As results, there will be a geodatabase for quality parameter analysis and the factors that affect this quality. In addition, the dissemination of results in local, national and/or international events and at least one scientific publication with Latindex or Scopus indexation is expected.
